Modern boats employ professional chefs (often previously hotel-trained), plan menus in advance, source fresh produce and protein, and tailor meals around the dive schedule for optimal energy and recovery.

Three full meals plus snacks between dives: • Pre-dive light breakfast (6:30am): coffee, tea, juice, fresh fruit, light pastries, granola/yogurt. Just enough to dive comfortably. • Full breakfast (after dive 1, around 9:30am): cooked breakfast (eggs to order, bacon, sausage, hash browns), buffet (fresh fruit, cereals, breads, cold cuts, cheeses). • Snack (between dive 2 and dive 3, around 12:30pm): sandwiches, salads, soup, snacks like chicken wings or empanadas. • Lunch (after dive 3, around 2:30pm): full hot meal — grilled fish, pasta, rice, vegetables, salad bar. • Snack (between dive 4 / before night dive, around 6pm): cookies, fruit, light pastries. • Dinner (after last dive, around 7:30pm): three-course meal — soup or salad starter, hot main (fish, meat, vegetarian), dessert.
Cuisine style
International menus with local touches. Maldives boats often serve curry alongside continental dishes. Indonesian boats include nasi goreng and satay. Egyptian boats serve Middle Eastern mezze. Most boats have a 'galley team' headed by a head chef trained in international cooking, supported by 1–2 sous chefs and a couple of kitchen helpers.
Dietary accommodation
Universally accommodated with 7+ days advance notice. Vegetarian and vegan are now standard with no extra charge. Gluten-free, dairy-free, kosher, halal and major allergies (nuts, shellfish, eggs) accommodated. Provide details at booking, not on day one.
Drinking water
Universal, free, unlimited. Most boats have a freshwater maker (RO desalination) producing potable water. Refill stations at multiple points around the boat. Bring a refillable water bottle.

Allergies and preferences
